How to Safely Remove Heavy Carbon Buildup from Commercial Griddles

1. Cool and Prep the Surface

Using a high-temp grill pad (never steel wool), gently agitate the lifted carbon. Squeegee the liquid into the grease trap. Finally, neutralize the surface by rinsing thoroughly with water or a mild acid (like lemon water or vinegar) to remove any chemical residue. Wipe clean and apply a thin layer of fresh cooking oil to re-season the metal.
